STRESSFUL TIMES

There are a lot of things going through everyone’s minds right now, most especially the uncertainty about so many things. You may be working from home, hours cut back or possibly facing or have lost your job. We feel for you and we are going through similar struggles ourselves.

SCHEDULING

There are many of you that your norm is to be a road warrior and now your commute is a left turn at the kitchen with a quick stop for your coffee. Green light to continue into your office (dining room) and get to work. We realize that your day is full and running errands on that “lunch break” (which probably never happened). You are doing your best to juggle so many things - The job, the kids, the food, the endless amounts of dishes, the list goes on. How will everything ever get done?  We can help you with that.

We want you to know that we are happy to pick up/drop off your vehicle and take care of those issues that you might have been putting off because you need your car to get to work, school and sports. Now all those things that have suddenly come to a halt.

Keep Your Vehicle Moving...

KEEP YOUR CAR MOVING

Right now we are all under the governors orders to stay at home. That in turn means that you are most likely not traveling the roads and there is probably a good chance your vehicle has not been moved in a few weeks. We can not stress enough how important to keep your car moving.

 

Cars are not meant to be parked. They are meant to be moving. There are problems that can creep up on your vehicle if it sits for an extended period of time, particularly when there has been a lot of rain, like we have experienced this spring. 

BRAKES

The brakes can rust up. If the vehicle isn’t moving and the brakes are not being operated to clean off those rust spots, more rust can build up.  As rust is invasive, this can cause your brakes to perform improperly, resulting in a safety concern.

Pineapple Carrot cake

Ingredients

For the cake:

2 cups granulated sugar

1 1/3 cups vegetable oil

3 extra-large eggs, at room temperature

1 teaspoon pure vanilla extract

2 1/2 cups plus 1 tablespoon all-purpose flour, divided

2 teaspoons ground cinnamon

2 teaspoons baking soda

1 1/2 teaspoons kosher salt

1 cup raisins

1 cup chopped walnuts

1 pound carrots, grated

1/2 cup diced fresh pineapple

For the frosting:
3/4 pound cream cheese, at room temperature

1/2 pound unsalted butter, at room temperature

1 teaspoon pure vanilla extract

1 pound confectioners' sugar, sifted


Preheat the oven to 350 degrees F.
Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans.

For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer fitted with the paddle attachment until light yellow. Add the vanilla. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.
Add the dry ingredients to the wet ingredients. Toss the raisins and walnuts with 1 tablespoon flour. Fold in the carrots and pineapple. Add to the batter and mix well.
Divide the batter equally between the 2 pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely in the pans set over a wire rack.

For the frosting:
Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined. Add the sugar and mix until smooth.

Place 1 layer, flat-side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake.
