Pasta/Antipasta Skewers

As we enjoy the warmth of July, it’s the perfect time to savor light, refreshing, and easy-to-make dishes that are ideal for picnics, barbecues, or simply a delightful meal at home. We are excited to share a fantastic recipe that’s sure to be a hit at any summer gathering—Pasta/Antipasto Skewers. This flavorful dish was crafted by our very own, Cassandra. 

1 package of cheese tortellini, cooked and cooled
1 jar green olives
1 jar roasted red peppers
1 calamata olives
1 jar marinated artichoke hearts, drained and halved
1 small package of mozzarella balls
1/2 pound of hard salami sliced thin

Antipasta IMG_3936For the Dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon Italian seasoning
Salt and pepper to taste
1 garlic clove, minced

Directions:
Prepare the Ingredients:
Cook the cheese tortellini according to the package instructions. Drain and rinse with some cool water. Place mozzarella balls in a bowl with half the dressing
Slice the roasted red peppers
Drain the olives and marinated artichoke hearts.
Fold each salami slice fold into quarters to make them easier to skewer.
Make the Dressing:
In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, minced garlic, salt, and pepper. Adjust the seasoning to taste.
Assemble the Skewers:

Take wooden or metal skewers and begin threading the ingredients in an alternating pattern: start with a green olive, followed by a slice of salami folded into quarters, mozzarella ball,Tortellini, artichoke heart, roasted red pepper slice, calamata olive. Repeat until the skewer is full.
Arrange the assembled skewers on a serving platter.

Drizzle with Dressing:
Just before serving, drizzle the skewers with the remaining homemade dressing. For extra flavor, let them marinate in the fridge for 30 minutes.
Serve and Enjoy:
Serve the skewers chilled or at room temperature. They make a beautiful and tasty addition to any summer meal!
Tips from Cassandra:
Feel free to mix and match your favorite antipasto ingredients. cherry tomatoes, cucumber slices, or even chunks of prosciutto can be wonderful additions.
