When planning your Mothers Day brunch consider this tasty side that packs the most pleasant surprise. On their own, these bacon strips are so delicious that you will want to at least double the recipe or you'll find that the dish is half empty from being snitched before it's time to serve. Crumbled, they are a nice addition to a quiche or wrap them around some pineapple to give a lovely sweet and savory option.
1 cup orange juice
1/4 cup of honey
1 tablespoon of dijon mustard
1/4 tablespoon of pepper
1/8 tablespoon of ginger
1 lb of bacon
Reduce the first five ingredients in a saucepan until thickened.
Bake the bacon on a rack for ten minutes then drain.
Coat the cooled bacon heavily and bake again for 10 minutes.
Flip the bacon halfway through and coat the bacon generously.
