Mother’s Day Fancy Ciabatta

Mother’s Day is right around the corner, and I’ve been doing some thinking. Usually, the hubby likes to go all out and "up the game," but this year I’m looking to take the bulk of the work off his plate. The weather has finally turned, which means the grass needs mowing (yadda yadda), and honestly, nobody wants to be stuck inside hovering over a stove for four hours.

We’re keeping it to a small crowd this year, so I wanted something that felt like a "treat" without the fuss.

My solution? A fancy sandwich loaded with the good stuff.
This isn’t just a sandwich; it’s a centerpiece. By hollowing out a crusty loaf of bread and layering it with high-quality meats, sharp cheese, and a zesty homemade tapenade, you create something sophisticated enough for a celebration but easy enough to eat with one hand while you chat on the patio.

The best part? You actually want to make this ahead of time. Wrapping it up and weighing it down for an hour allows the flavors to meld and the bread to soak up that delicious balsamic and olive oil. No mayo in sight, no soggy bread, and absolutely no stress. Toss together a fresh green salad on the side, and you have the perfect, breezy spring lunch.

Homemade Olive Tapenade:
1 cup Kalamata olives, pitted
1 tbsp capers, drained
1 clove garlic, minced
2 tbsp fresh parsley
2 tbsp olive oil
1 tsp lemon juice
Pulse all ingredients in a food processor until chunky-smooth.

Sandwich Ingredients:
1 large loaf crusty Ciabatta
1/2 lb Prosciutto di Parma
1/2 lb Sharp Provolone
1 jar roasted red peppers, patted dry
1 cup marinated artichoke hearts, sliced
Fresh arugula
Balsamic glaze

Directions:
 Slice the ciabatta in half lengthwise. Hollow out some of the bread from the top and bottom to make room for the fillings.
Spread the tapenade on the bottom. Layer the prosciutto, cheese, peppers, and artichoke hearts.
Top with arugula and a drizzle of balsamic glaze.

Replace the top bread. Wrap the loaf tightly in plastic wrap and place a heavy skillet (or a brick!) on top for at least 1 hour in the fridge.

Slice into thick wedges and enjoy!
