Hunter’s Yummy Red Velvet Cupcakes

If you are a fan of Red Velvet Cake, get ready to have your taste buds transported to dessert heaven. These delectable treats are not for the faint of heart - they are rich, creamy, and oh-so decadent. But don't let the long list of ingredients intimidate you. Even if it seems daunting, take a leaf out of young Hunter's book and tackle this recipe like a pro. Trust me, the results will be nothing short of fantastic.

Cake:
2 ½ c flour
½ c unsweetened cocoa powder
1 t baking soda
½ t salt
2 c sugar
1 c butter, softened
4 large eggs
1 c sour cream
½ c milk
1 oz Red Food Color
2 t Pure Vanilla Extract

Vanilla Cream Cheese Frosting:
1 (8 oz) package of softened cream cheese
¼ c softened butter
2 T sour cream
2 t Pure Vanilla Extract
1 (16 oz)  confectioners' sugar

Directions:
Beat sugar and butter in a large bowl with an electric mixer on medium speed until light and fluffy, about 5 minutes. Beat in eggs, one at a time. Mix in sour cream, milk, food color, and vanilla. Gradually beat in flour mixture on low speed until just blended; do not overbeat. Spoon batter into the prepared muffin cups, filling each 2/3 full.

Once you've prepared the cake batter, it's time to bake these beauties. Preheat your oven to 350*F  and line 30 muffin cups with paper liners. Spoon the batter into the prepared cups, filling each about two-thirds full. Pop them in the oven and let the magic happen. In just 20 minutes, your kitchen will be filled with the irresistible aroma of freshly baked cupcakes.

While the cupcakes cool on a wire rack, it's time to whip up the creamy and luscious Vanilla Cream Cheese Frosting. Beat together cream cheese, butter, sour cream, and Vanilla Extract until light and fluffy. Gradually add confectioners' sugar until you achieve a smooth and velvety consistency.

 Spread the frosting evenly over the top of the cupcake. Try not to eat it while doing so.
