Hi there! Happy BBQ season! Let me tell you, there's nothing I love more than grilling up a delicious meal outdoors, especially during the warm summer months. Cooking inside? No thanks! This recipe is a fantastic way to keep things simple yet incredibly tasty. Plus, we've kicked it up with some tang, only to get a smooth fruity finish. We think we’ve come up with something here. Let’s get grilling!
Ingredients:
1 pound kielbasa, cut into 4 pieces
2 tablespoons whole-grain mustard
2 tablespoons apple cider vinegar
1/4 cup extra-virgin olive oil
1 large white onion, cut into 6 wedges
1 pound frozen potato-and-cheddar pierogies (do not thaw)
Kosher salt and freshly ground pepper
1/4 cup roughly chopped fresh parsley
Sour cream
Applesauce
Instructions:
Preheat the Grill to Medium
Place the kielbasa on the grill, turning occasionally, until they have those beautiful grill marks, about 8 to 10 minutes. Transfer to a baking sheet or platter.
Mustard Dressing: In a large bowl, whisk together the whole-grain mustard and apple cider vinegar. Slowly drizzle in 2 tablespoons of olive oil while whisking until the mixture is smooth and well combined.
Toss the onion wedges and frozen pierogies with the remaining 2 tablespoons of olive oil. Season with a bit of kosher salt and freshly ground pepper. Place them on the grill, cover, and cook for about 5 minutes until the pierogies start to thaw and the onions begin to soften. Turn and continue grilling, covered, for another 4 to 6 minutes, until the pierogies are fully cooked and the onions are tender. Transfer them to the same baking sheet or platter as the kielbasa.
Slice the grilled kielbasa into bite-sized pieces and add them to the bowl with the mustard dressing. Roughly chop the grilled onions and add them, along with the grilled pierogies and fresh parsley, to the bowl. Season with a little more salt and pepper if needed, and toss everything together until well coated with the dressing.
Portion kielbasa and pierogi mixture into shallow bowls. Serve each portion with a dollop of creamy sour cream and a side of sweet applesauce. These sides complement the smoky, savory flavors perfectly. Serve and Enjoy!
