Apple pie for the win!

Don't you just love this time of year? The crisp mornings and the fall colors. We love to do our annual tradition of apple picking and selecting pumpkins and mums for decorations. Then home to start the bake-off. Well actually, my sister started days ago with cookies and favorites of the crowd, but we like to make a couple of apple pies with our selections from the morning's adventure. This recipe is a favorite, but we do a few variations just to keep it interesting. We break for dinner while the pies finish off and fill the house with an amazing aroma. Then forks up! But, don't even think about forgetting a scoop of ice cream on top! 

Ingredients
Pie:
1 unbaked pie crust
3 large or 4-5 small Granny Smith apples, peeled, cored, and sliced thin
½ cup brown sugar
½ cup sugar
1 tbsp all-purpose flour
½ cup heavy cream
2 tsp vanilla extract
⅛ tsp cinnamon
Ice cream


Topping:
7 tbsp butter
¾ cup all-purpose flour
½ cup brown sugar
¼ cup pecans (add more if you like!)
A dash of salt

Directions
Preheat your oven to 375°F. Roll out the pie dough and fit it into your pie pan. Feel free to crimp the edges for a little extra flair!

Apple Filling: In a large bowl, toss the thinly sliced apples. Whisk together the cream, sugars, flour, vanilla, and cinnamon in a separate bowl. Pour mixture over the apples and then transfer the apple filling into your pie shell.

Making the Topping: Blend the butter, flour, sugar, pecans, and a pinch of salt. You want it to form little clumps—those will get golden and crispy on top!

Bake It Off: Cover the edges of the pie with foil to prevent over-browning, and loosely lay a piece of foil over the top to avoid burning. Place the pie on a rimmed cookie sheet to catch any bubbling juices. Bake for an hour, then remove the top foil and bake for another 15-20 minutes until everything is golden and bubbly.

Serve: Let the pie cool just a bit before slicing in (if you can resist!). Serve it warm with a generous scoop of  ice cream
