A Diner-Inspired Breakfast You Can Make at Home
I’ll be the first to admit—I’m not exactly the one in the kitchen whipping up gourmet meals. Breakfast is usually something we grab on the go, because let’s be honest, even eggs and toast just taste better when they come with a side of something crispy and golden. And of course, home fries are always a bonus.
Living in diner heaven—New Jersey—I rarely find a breakfast that doesn’t hit the spot, but on a recent trip to Norwalk, CT, I ordered something that surprised me. It was simple: egg whites, spinach, feta, and fresh tomatoes tucked into a warm pita—but it was absolutely delicious. So much so that I decided to recreate it at home. And you know what? I didn’t miss the home fries or meat one bit.

Ingredients
3 large egg whites
½ cup fresh spinach, chopped
¼ cup diced fresh tomatoes
2 tablespoons crumbled feta cheese
1 whole wheat or white pita, cut in half
½ tablespoon olive oil or butter (for cooking)
Salt and pepper, to taste
Optional: A pinch of dried oregano or red pepper flakes for extra flavor
Instructions
Heat the Skillet:
In a non-stick pan over medium heat, add a small amount of olive oil or butter.

Cook the Spinach:
Add the chopped spinach to the pan and sauté for 1-2 minutes until slightly wilted.
Scramble the Egg Whites:
Pour the egg whites into the pan and stir gently. Cook until they are set but still soft.
Add Tomatoes and Feta:
Stir in the diced fresh tomatoes and crumbled feta cheese. Season with salt, pepper, and optional oregano or red pepper flakes. Cook for another minute, just enough to warm everything through.
Prepare the Pita:
Brush the outside of the pita halves lightly with olive oil or butter.
Stuff each pita half with the egg white mixture.
Grill the Pita:

Place the stuffed pita halves on the pan and press down slightly. Grill for about 1-2 minutes per side until golden brown and slightly crispy.
Serve & Enjoy:

Let cool for a moment, then cut in half and serve warm!
Tips & Variations:
Add some diced onions or roasted red peppers for more depth of flavor.
For extra protein, toss in some diced turkey or chicken.
Use a whole wheat pita for added fiber and a nutty flavor.
Want a creamier texture? Spread a little hummus or tzatziki inside the pita before adding the filling.
