We love that making our dinner on the grill means we get to enjoy being outside and not cooped up in the kitchen. The fact that it results in fewer dishes (usually) is a big bonus. Even though we enjoy grilling, the go-to meals tend to get a little boring after a while. That’s why we love this recipe. We're changing up the flavors with the honey soy and ginger that gives it a little twist.
Ingredients:
1/2 cup salt-reduced soy sauce
1/4 cup honey
1-inch piece of fresh ginger, peeled, finely grated
1 garlic clove, crushed
8 chicken drumsticks
2 t sesame seeds, 2T fresh diced chives for garnish
Combine soy sauce, honey, ginger, and garlic in a large dish. Add chicken. Turn to coat. Cover with plastic wrap. Refrigerate for 2 hours, turning occasionally.
Preheat your grill to medium-high heat (about 400°F).
Remove the chicken from the marinade. Place a single layer on the grill grate and cook for about five minutes per side, until the skin is browned and crispy on all sides. Lower the heat to about 300°F, and close the grill. Cook for about 25 minutes, turning once halfway through brushing with marinade and sprinkling the sesame seeds on each piece. Garnish with chives.
This goes great with some jasmine rice and a green salad with Asian dressing.
