Ingredients You’ll Need
For Two Servings:
1 tablespoon vegetable oil (plus more for frying eggs)
1 (15-ounce) can black beans, drained
Kosher salt and freshly ground black pepper
1–2 dashes hot sauce (or more if you’re bold)
1/2 teaspoon smoked paprika
4 tostada shells
1/2 cup grated pepper jack cheese 

2 large eggs
1/2 ripe avocado, diced
2 tablespoons salsa (store-bought or homemade)
2 tablespoons sour cream
1/2  chipotle hot sauce
Fresh cilantro leaves (for garnish)
Lime wedges 


 Step-by-Step Instructions
1. Spice Up Your Beans
In a small saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the black beans along with a pinch of salt and pepper, hot sauce, smoked paprika, and cumin. Mash the beans gently with a fork as they warm—leave some texture for that rustic feel.

2. Whip Up the Chipotle Crema
In a small bowl, stir together the sour cream and chipotle hot sauce and smoked paprika until smooth and creamy. This smoky, spicy crema adds the perfect contrast to the richness of the egg and cheese.

3. Build the Stack
On a parchment-lined baking sheet, create two separate stacks. For each one, layer like this:

1 tostada shell
A few tablespoons of mashed beans
A sprinkle of pepper jack cheese
Another tostada shell
More beans
More cheese

Pop the baking sheet into a preheated 375°F oven and bake for 3–5 minutes, or until the cheese is melted and the edges start to crisp up.

4. Fry Those Eggs Just Right
In a nonstick skillet, heat about 1/4 inch of oil over medium heat. Carefully crack in the eggs and fry until the whites are cooked through but the yolks are still gloriously runny—about 5–7 minutes.

5. Assemble & Garnish
Place each tostada stack on a plate. Top with:
