Game Day Philly Cheesesteak Sliders Recipe

So, yeah — the big day is here. The one where y’all are glued to the screen, double-checking your squares and hoping your box hits for a big payoff. We’re not the biggest football fans in my house, but on this day, we make it somewhat of a priority. Mostly because… snacks. And really, who doesn’t love the snacks?At some point before Sunday, I might even find out who’s actually playing, and like clockwork, the hubby and I will end up picking opposing teams. It’s tradition at this point.

I’ve been craving a Philly cheesesteak for a while now, and sliders just make the perfect game-day app. What I really love about this recipe is how easy it is to scale up or down — whether you’re feeding a full house or just a couple of competitive snackers.

Ingredients

  • 1½ lb boneless ribeye steak, very thinly sliced (freeze 15–20 min to make slicing easier)
  • 8–10 oz sliced mushrooms (white or cremini)
  • 1 medium yellow onion, thinly sliced
  • 1 large green bell pepper, thinly sliced (optional)
  • 2–3 tbsp vegetable oil or butter, divided
  • Kosher salt & freshly ground black pepper
  • 12 mini slider buns (Hawaiian rolls our go to)
  • ~8–12 slices provelone 
  • 2 tbsp unsalted butter + 1 clove garlic, minced (for brushing buns)

Instructions

  1. Prep the Steak:
    Place your ribeye in the freezer for about 15–20 minutes — this firms it up and makes it so much easier to slice ultra thin against the grain.
  2. Sauté Veggies:
    • Heat 1–2 tbsp oil or butter in a large skillet over medium-high heat.
    • Add onions, mushrooms (and red bell pepper if using).
    • Season with a pinch of salt & pepper and cook until soft and caramelized, about 8–10 minutes.
    • Transfer to a plate and set aside.
  3. Cook the Steak:
    • In the same skillet, add a bit more oil if needed and heat over medium-high.
    • Add the thinly sliced steak, season with salt & pepper, and cook just until browned (about 3–4 minutes).
    • Mix the cooked veggies back into the pan with the steak.
  4. Assemble the Sliders:
    • Slice buns in half horizontally and lay the bottoms in a baking dish or sheet pan.
    • Pile steak + mushrooms + onions evenly on each bun bottom.
    • Top with provolone slices.
  5. Finish & Bake:
    • Cover with the top buns.
    • Mix melted butter with minced garlic and brush over the tops of the buns.
    • Bake at 350°F  about 10–12 minutes, until cheese is melted and buns are golden.
  6. Serve:
    Grab napkins — these are juicy and addictive. 👌
