Berries are finally showing up at (almost) reasonable prices again, which means I’ve been grabbing blackberries every time I hit the produce aisle.
Most mornings, I’ll sit down at my desk with a container and—poof—they’re gone. (Yes, the small one… but let’s be honest, I could easily put away the quart.)
I started digging around for a new recipe to mix things up a bit.My better half loves a good sweet here and there, but also likes to remind me that I’m a “slice on day one, forkful after that” kind of person. Which means he usually gets stuck finishing the rest… there are worse problems to have.
So when I came across this, it felt like a win. It works as a morning treat or a dessert, it’s easy to pull together, and you can swap in whatever fruit you have on hand. I played around with it a bit and landed on a pear and blackberry combo that turned out pretty solid—the crew here agreed.
Ingredients
2 cups fresh or frozen blackberries
1/2 cup white granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 cup chopped pear (fresh or canned and drained)
2 tablespoons milk
1 egg
For the Lemon Glaze:
1 cup powdered sugar2 to 3 tablespoons fresh lemon juice
Instructions
Remove dough from one can of the crescent rolls and place in the bottom of a 9 x 13 baking dish, pinching the seams together to make a solid dough (I do not spray the dish).
Combine the sugar, blackberries, vanilla extract, ground cinnamon, milk, and egg in a bowl.
Mix with a spoon and spread over the crescent roll dough in the baking dish.
Sprinkle the chopped pear over the blackberry mixture.
Cover the dish with the other can of crescent rolls for a topper like in the photo below.
Bake in a preheated 350-degree oven for about 30 minutes or until brown on top.
Remove and let cool completely.
While cooling, prepare the lemon glaze: Whisk together the powdered sugar and lemon juice until smooth.
Once cooled, drizzle the lemon glaze on top. Makes about 8 servings.
